Kanak Attack founder Michael Mohica opened Pineapple Express in July 2018. The restaurant, which doubles as headquarters for Kanak Attack's catering and food truck services, features indoor and outdoor seating and rotating a la carte menus for lunch and dinner.
Fans of Kanak Attack discovered a menu full of their favorites (kalua pig, rice bowls, poke bowls, tacos, house-made salads) alongside new offerings inspired by Mohica's homeland, such as the Spam Rice Bowl and Loco Moco (coconut rice, hamburger patty, eggs, kalua pig gravy).
"I would love to thank the community of Meridian for embracing Pineapple Express," Mohica said. "We have had a great first year and are looking forward to another great year serving up the flavors and aloha spirit of Hawaii."
The Hawaiian-born Mohica established Kanak Attack in 2000 after graduating from Boise State's culinary arts program and has grown the business into one of the Treasure Valley's most popular catering companies, best known for its traditional kalua pig roasts. Kanak Attack's two food trucks are fixtures at large events and annual festivals throughout the Valley. Mohica will debut Kanak Kitchen 11*11, a new breakfast and lunch restaurant, in Downtown Boise this fall.
